At 530 meters, planted in granitic quartz soils these 20 year old vines produced a high acidity and high sweetness juice for the relatively late 2020 harvest.
For those who like data the juice was: 13.2 Baume (13.58% potential alcohol!), 3.0 pH, 10.4 Titratable Acidity (Very high).
24% of the juice was fully fermented in an old french oak barrel with wild endogenous yeasts.
74% of the juice was fermented in at temperature controlled stainless steel tank with pitched commercial yeast, the ferment was stopped early to maintain sweetness.
The blend created a complex, fruit forward wine with layers given by the two fermentation methods.
A high acidity, mineral forward baseline balances the fleshy, floral sweetness of this intensely playful wine.
