This single Barrel project is a new take on Sauvignon Blanc.
This dry yet complex and unexpected wine starts with a mix of jasmine and honeysuckle, it delivers on flavour with candied apple and nutmeg, with a fluffy brioche finish. It has an acid spine on which a fruit sweetness appears with decent phenolic grip.
How it was made:This wine was warm soaked with the stems to achieve maximal mouthfeel and fermented in oak to develop a creamy texture.
