Witchy Wine
2021 Strathbogie Shiraz
A collaboration with the "Coburg Kollectiv", this wine is a blend of many different minds and vinifications from wild organic overgrown 20 year old vines.
This wine is the result of a long story, including a good Guy and his willingness to let a group of louts harvest some of his fruit.
This fruit was left unpruned and unsprayed for at least a year and presented a grand buffet to all local birds. The harvest was tirelessly defended by means of shots to the sky and a patrolling dirt bike to to keep the hungry wee beasts at bay.
The wine was destemmed and crushed, 20% of stems were added back in and the wine fermented on skins for 2 weeks, 40% was fermented on wild yeast, and 40% on Italian yeasts. A further 20% was fermented with wild yeast in a very reductive manner.
Pressed and aged in a french oak barrel and kept on lees for 8 months before racking, back into barrel.
Bottled in both a sparkling and still style.
This wine is fresh, with cherry and forest fruit on the nose, continuing with this fruit alongside tannin bound wood and a lingering savoury freshness on the palate that makes this wine a journey for the senses, excels as a chilled sparkling shiraz, and as a cool bbq sipper!
It was fun to make, and it is fun to drink! Only a single barrel was bottled!
